Bird's nest-sweet glutinous rice


150g soaked bird’s nest strips
150g black glutinous rice 
113g rock sugar 
¼ dried tangerine peel 
½ cup fresh coconut juice 
8 cups water


  1. Wash black glutinous rice. Soak in water for 3 hours. Soak dried tangerine peel and remove pith.

  2. Bring 8 cups of water to the boil. Add dried tangerine peel and black glutinous rice. Turn to medium-low heat and cook till the rice becomes tender. Add rock sugar and bird’s nest. Cook for 5 minutes until the sugar has dissolved. Stir in coconut juice and serve.
