Bird's nest-almond juice

Ingredients
113g soaked premium bird’s nest
75g sweet almonds
8 bitter almonds
2 cups warm water
75g rock sugar(crushed)
Method:
- Wash sweet and bitter almonds. Soak in water for 1 hour. Drain. Put into a blender and add 2 cups of warm water. Process into almond juice. Pour into a fish bag and drain.
- Pour almond juice into a clean pot. Add rock sugar and bring to boil over low heat. Cook until the sugar has dissolved (keep stirring while cooking). Add bird’s nest. Then bring to boil. Serve.
