Broccoli Soup wtih Bird's Nest

Ingredients
113 g superior bird’s nest, soaked until soft and stewed
113 g broccoli
carrot, diced
3 cups stock
Seasoning :
1/4 tsp salt
2 tbsps water chestnut powder
4 tbsps water
Method:
- Cut broccoli into short sections, soak in diluted salty water for a while and rinse. Parboil and rinse broccoli and carrot dices.
- Bring stock to the boil. Add bird’s nest, broccoli and carrot dices and cook for 5 minutes. Combine with seasoning and dish up. Serve.
